For me it's a combination of:

  1) Mac OS X running a VM of Fedora + sugar-jhbuild or (currently) a Blueberry image
  2) Sugar on physical XO-1s

...and for coding:

  1) Xcode (when pythoning on a Mac)
  2) vim (when pythoning on an XO or VM)

Using git for version control.
