With the new GStreamer support this may be possible to implement, but
hasn't been done yet, to my knowledge.
There was a recent discussion on how to export an Etoys animation as
Animated GIF file. Abe-san provided a "quick hack" that works quite
well:

Under Sugar you would probably have to drop his attachment into Etoys
using the Sugar Frame. And then it would only save to the "data"
directory so you would need to follow this example to copy the
animation to the Journal:

Not quite sure what you mean here. Using an external screen-cast tool
is possible of course.
For recording demos or tutorials in Etoys we have the "Event Theater"
which records events and voice-over. Of course you need Etoys for
playback, too.
