 The Finance activity should show uncategorized entries in charts as
 "Unknown" instead of as a value with a blank after it.

 We may also wish to default to tagging items as Unknown as well in the
 entry view to make it clear to users that there is a field there which
 takes a value.

 When someone sees a blank label or field, they often wonder what the
 failure was.  Setting it to "Unknown" should avoid this.
